Abstract

Vitamins are essential organic compounds for human wellbeing. Milk is known to be an adequate source of water-soluble vitamins, but their presence in mare milk has very poorly been studied. In this study, ten water-soluble vitamins in mare milk from the autochthonous breed Basque Mountain Horse have been characterized for the first time. The milk studied was particularly rich in vitamins C, B3, B5, and B12. Lactation stage had a significant effect on the content of vitamins B3, B5, B6 and B12. Management system (farm) significantly affected vitamin B2 and B3 levels. These results show that Basque Mountain Horse breed can provide a high quality milk.
